The £2 that the waiter took is already counted in the £27. It doesn't need to be added on to it. The remaining £3 is in their pockets

The way I explained it to Sam was that the bill was £25 so they made it up to £27 (to include the £2 tip) which is easier to divide by three and then they took £1 each. Why the tightarses didn't just leave the full £30 I'll never know
After the waiter nearly overcharged them by a fiver he was lucky to get anything!
